Mulukhiyah is widely consumed in the Middle East, East Africa, and North Africa, and is known as Saluyot in the Philippines. It has a strong, bitter flavour, and upon boiling, produces a thick, gelatinous broth. This texture has been likened to that of cooked okra. When prepared, Mulukhiyah is generally cooked and served as a soup or stew, often with chicken or chicken stock, white rice, and lemon juice.
