Freekeh or Bakliyat in Turkish is a cereal food made from green durum wheat that is roasted and rubbed to create its unique nutty flavour. It is an ancient dish derived from Levantine and North African cuisines, remaining popular in many countries of the eastern Mediterranean Basin where durum wheat originated.
Freekeh is high in vitamins and minerals, and in both fibre and protein. In fact, freekeh has notably more fibre than brown rice and even quinoa.
